Description
This Butter Lettuce Salad with Avocado and Dijon Dressing is a light, elegant side dish ready in 10 minutes. Tender lettuce leaves are topped with creamy avocado and drizzled with a zesty homemade vinaigrette for a fresh, healthy bite.
Ingredients
2 heads butter lettuce (Bibb or Boston), washed and dried
1 large ripe avocado, sliced
2 tablespoons fresh chives or scallions, chopped
4–5 radishes, thinly sliced (optional)
1/4 cup shaved Parmesan or Asiago cheese (optional)
For the Dijon Vinaigrette:
3 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar (or fresh lemon juice)
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1 clove garlic, minced
Salt and freshly cracked black pepper to taste
Instructions
1. In a small jar or bowl, whisk together the olive oil, vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
2. Wash the butter lettuce leaves gently and dry them thoroughly (a salad spinner works best). Leave small leaves whole and tear larger ones.
3. Arrange the lettuce on a large serving platter or in a wide bowl.
4. Top with sliced avocado and radishes (if using).
5. Drizzle the dressing over the salad just before serving.
6. Garnish with chopped chives and shaved cheese. Serve immediately.
Notes
Ensure the lettuce is completely dry so the dressing clings to the leaves.
Slice the avocado just before serving to prevent browning, or toss slices in a little lemon juice if prepping ahead.
Add grilled chicken, shrimp, or chickpeas to turn this into a main meal.
For a tropical twist, add diced mango.
