Ingredients
8 oz egg noodles or rice noodles
1 lb boneless, skinless chicken breasts or thighs, sliced into strips
1 red bell pepper, thinly sliced
1 cup sugar snap peas or broccoli florets
½ cup creamy peanut butter
3 tablespoons soy sauce (or tamari)
2 tablespoons honey or maple syrup
1 large lime, zested and juiced (approx 2 tbsp juice)
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
Warm water, to thin sauce
Fresh cilantro and crushed peanuts, for garnish
Instructions
1. Cook noodles in a large pot of salted boiling water according to package directions. Reserve ½ cup of cooking water, then drain.
2. While noodles cook, whisk together peanut butter, soy sauce, honey, lime juice, lime zest, garlic, ginger, and 2-3 tablespoons of warm water in a bowl until smooth and creamy.
3. Heat oil in a large skillet over medium-high heat. Add chicken strips and cook for 5-6 minutes until golden and cooked through.
4. Add bell peppers and snap peas to the skillet. Stir-fry for 2-3 minutes until vegetables are crisp-tender.
5. Reduce heat to low. Add the cooked noodles and the peanut sauce to the skillet.
6. Toss well to coat. If the sauce is too thick, add small splashes of the reserved pasta water until it reaches your desired consistency.
7. Serve hot, garnished with fresh cilantro, crushed peanuts, and extra lime wedges if desired.
Notes
For a spicy kick, add 1-2 teaspoons of sriracha or chili garlic sauce to the peanut mixture.
Leftovers store well in the fridge for up to 3 days; the sauce may thicken, so add a splash of water when reheating.
To make this gluten-free, use rice noodles and tamari instead of soy sauce.
