Ingredients
1 cup fresh raspberries
1/4 cup fresh mint leaves, plus more for garnish
1 cup fresh lemon juice
1/2 cup honey or simple syrup
3 cups cold water
1 cup ice
Fresh raspberries and mint sprigs for garnish
Instructions
1. Muddle mint leaves gently in the bottom of a pitcher
2. Blend raspberries until completely smooth
3. Strain the raspberry puree through a fine mesh strainer into the pitcher
4. Add lemon juice, honey, and cold water and stir well
5. Taste and adjust sweetness as needed
6. Add ice, garnish with raspberries and mint sprigs, and serve cold
