4 small Persian limes, quartered (unpeeled)

3 tablespoons raw honey, plus more to taste

1 can (13.5 oz) full-fat coconut milk, chilled

1½ cups cold water

2 cups ice cubes

Pinch of salt

Pinch of turmeric (optional, for a deeper golden color)

Lime slices and a drizzle of honey for garnish


Instructions

1. Wash the limes thoroughly under cold running water, scrubbing the skin clean of any wax or residue.

2. Cut each lime into 4 to 6 wedges, keeping the peel fully intact.

3. Add the lime wedges, raw honey, chilled coconut milk, cold water, salt, and turmeric if using to a blender.

4. Blend on high speed for exactly 5 seconds — blending any longer pulls harsh bitterness out of the lime peel.

5. Set a fine-mesh strainer over a large pitcher and pour the blended mixture through it, pressing firmly with a spoon to extract all the golden liquid.

6. Discard the lime pulp and peel solids remaining in the strainer.

7. Taste the limeade and stir in a little extra honey if you prefer a sweeter drink.

8. Add ice cubes to the pitcher and stir gently to combine and chill.

9. Pour into tall glasses filled with ice, drizzle a little honey over the top, garnish with a lime slice, and serve immediately.

Notes

Use raw, unfiltered honey for the most complex floral flavor — wildflower or orange blossom honey work particularly well with lime and coconut.

Chilled full-fat coconut milk straight from the fridge gives the drink its rich, creamy texture — shake the can well before opening.

The optional turmeric adds a beautiful golden hue and a very subtle earthy warmth without overpowering the lime and honey flavors.

Blend for no more than 5 seconds — this is the single most important step for a smooth, non-bitter result.

For a vegan version, this recipe is already completely plant-based — just confirm your honey source if strict vegan guidelines apply.

Add 1½ oz of bourbon or dark rum per glass for a sophisticated cocktail version that highlights the honey notes beautifully.
