Ingredients
4 small Persian limes, quartered (unpeeled)
1 cup fresh or canned pineapple chunks, drained
½ cup coconut cream
½ can (7 oz) sweetened condensed milk
2 cups cold water
2 cups ice cubes
Pinch of salt
Pineapple wedges, toasted coconut flakes, and lime slices for garnish
Instructions
1. Wash the limes thoroughly under cold running water, scrubbing the skin well.
2. Cut each lime into 4 to 6 wedges, keeping the peel on.
3. If using canned pineapple, drain it well to avoid diluting the drink with excess syrup.
4. Add the lime wedges, pineapple chunks, coconut cream, sweetened condensed milk, cold water, ice cubes, and a pinch of salt to a blender.
5. Blend on high speed for exactly 5 seconds — stop immediately to prevent the lime peel from releasing too much bitterness.
6. Set a fine-mesh strainer over a large pitcher and pour the blended mixture through, pressing firmly to extract all the creamy liquid.
7. Discard the pulp and peel solids left in the strainer.
8. Add extra ice to the pitcher and stir gently to combine.
